What does the name “The Skinny Pancake” tell you? It certainly is unique, but what is it? A crepe! The Skinny Pancake in the small, quaint, nice town of Burlington Vermont (as I was on vacation on my way back from Montreal Quebec, Canada) is known for its crepes and you will not find a single pancake or anything like it in there just another way for saying a thin pancake. As soon as I walked in the little restaurant I knew that this was something new! I decided on sharing the Early Riser with my mother - a local farm egg and shredded Cabot cheddar. I had never tried a hard sunnyside up egg but I loved it, a nicely done egg with a perfectly fit on top slice of bread. My father had Noah’s Ark, frumple cake (a twisted mixed up crepe with cinnamon sugar) a delicious treat as I stole most of it from my father, it was so good! The maple syrup was homemade, something I had not found here in Massachusetts so I liked it!
The Skinny Pancake is definitely a restaurant you will not find anywhere else, at least not where I encountered but you will get a yummy delicious meal that will enhance your stay in Vermont.
